Megan Zillmer, Registered Dietitian, at Paulbeck’s County Market
Those looking to improve their diet with healthy meals have a new resource. In mid-June, Riverwood Healthcare began placing healthy recipe flyers in two local grocery stores—Paulbeck’s County Market in Aitkin and Ukura’s Big Dollar Store in McGregor.
The featured recipe for June-July is Coconut-Lime Turkey Skewers a great choice for summer grilling. This is a simple recipe with a short list of ingredients that takes less than 10 minutes to grill. The recipe flyer features a list of healthy menu options to go with this entrée, including steamed carrot sticks, brown rice, mixed berries and skim milk.
“This is one more way Riverwood is supporting community wellness,” says Megan Zillmer, Registered Dietitian at Riverwood, who selects the recipes and suggested menu choices. “Our goal is to keep the recipes simple, quick to prepare and delicious to make healthy eating the easy choice.”
Zillmer will introduce new recipe flyers at each grocery store every other month, with a new recipe coming out year round in June, August, October, December, February and April.
The back side of each recipe flyer includes information on diabetes education, nutrition services and wellness coaching offered at Riverwood.
